Professional Cupping - Introduction & Advanced

The Introduction one day course is great not only for those who work in the coffee industry but also the home barista or coffee enthusiast. You will learn how to assess coffee by taste and aroma, sampling coffees of a variety of quality.

What we will cover:

  • The importance of cupping (tasting) coffee, its value and how that is required in the coffee industry
  • Guidelines and procedure for setting up a cupping table, equipment required and how to cup
  • How we taste, how the human body creates a sensory evaluation
  • An introduction into how professional cuppers carry out their work
  • Tasting coffees from a variety of origins, looking at quality levels and defects within the coffee
  • Processing, nuances of origin, roasting profiles and cup characteristics
  • Group participation, review of coffees and their tastes

Our Advanced cupping course is designed to give students the next level of technical expertise to follow on from our introductory course. It combines theory and practical sessions to further develop your sensory analysis skills, and is highly recommended to those working in purchasing green coffee, roasting and tasting.

After completing the course you will be able to:

  • Test your taste sensation and aroma identification skills
  • Understand the theoretical background to sensory analysis
  • Identify the characteristics on the cupping table found in different arabica cultivars and understand the lineage of these cultivars
  • Set up cupping batches for triangulation and carry out analysis of your results

This is an extensive course with lots of technical details, so make sure you pack your notebook and pens. The course will run from 10am to 4.30pm with a light lunch provided. It is highly recommended to those working in purchasing green coffee, roasting and tasting. We ask that course attendees have:

  • Attended the 'Introduction to Cupping Course'
  • The core skills of being able to set up cupping batches and using cupping forms
  • A minimum of six months cupping experience and that they cup coffee regularly
